There is nothing I love more than easy beef….
I had to say it. I swear I’m an adult.
Anyways, in all seriousness, there really is nothing I love more than good ole fashion comfort food that’s simple to make but tastes like you need a culinary degree to make it. Don’t get me wrong there are recipes that have a 100 ingredients that I enjoy making. But something about going back to the basics just feels good in my loins.
First step is ESSENTIAL.
Something about Cinnamon Alcohol just solidifies that it’s Fall.
I promise this will make dinner way more fun.
Second step, get yourself a roast. I can’t tell you what kind because, I don’t know shit about cuts of meat. But I find one with decent marbling in it, this time I grabbed a top round roast.
Look at that goodness. It took me roughly 5 minutes to prep the whole thing.
These are the spices that I used. I used salt as well, but didn’t snap a pic… because it’s salt. Salt, pepper, rosemary, a bay leaf, garlic, a dash of cayenne pepper, and onion soup mix.
I diced up a few potatoes, carrots, and about half an onion and threw them in the bottom of the dutch oven so the roast didn’t stick. Throw these in there and pour roughly a cup and a half of beef broth and winner winner chicken dinner. Ugh. I hate it when people say that by the way. But it just came out. Word vomit. Blah.
The big winner here is the onion soup mix. It creates a decent gravy with all the juices (I feel so dirty whenever I say juices.. for the record). That combined with using the dutch oven vs. the crock pot has it falling apart after baking at 350 for around and hour and a half. Of course this varies with the size of roast you get. Everyone stuffed themselves with it including the kiddos. The potatoes were their fave, I passed on those and just went with some of the roast, carrots and had a good sized salad with it. Simple clean eating folks! Minus the booze of course but, alas, it makes the overall experience more enjoyable.
Mind you I also did a super healthy homemade mac and cheese… minus the healthy. Then I took it a step further and made Apple Churro Cheesecake Bars, so stinking good and so stinkin easy! I had to bust out my maternity pants for those. Stay tuned for more recipes!
Lazy Lady Pot Roast
- 1 4-5lb roast of your choosing
- 4 potatoes quartered
- 3 whole diced carrots
- 1 half chopped sweet onion
- 1 tbsp pepper
- 1/2 tbsp salt
- 2 tbsp rosemary
- 2 dashes cayenne pepper
- 1 bay leaf
- 1 pkg onion soup mix
- 1 1/2 cups beef broth
- 3 tbsp butter
Crack open your alcoholic beverage of choice.
Preheat oven to 350 degrees.
Throw all veggies in your dutch oven. No need to spray with any cooking spray. Set roast on top of the vegetables so it’s not touching the bottom at all. Coat the top of your roast with all the seasonings. Pour beef broth all around vegetables. Put 3 pads of bottom on top of roast. Cover and cook for an hour and a half, more or less depending on the size of your roast.
